Mission Complete

When Cecelia hand me this Vietnam Rice Paper, she was so excited and told me ”U know, I found this at the grocery shop near my house!! Can u imagine, “Kedai Runcit” sell this???”

Feel like telling her “I dun want to imagine.” Ha! Ha!…… because her excitement and imagination will always end up become my mission.

Goi Cuon: Rice Paper Spring Rolls (Vietnam)

Filling :

- Meehun, soaked, blanched & drained.

- Lettuce, Carrot, Cucumber, Thai Basil Leaves -- Shredded

** Optional : Chicken Filling **

Heat up oil, sauted chopped onion, Add in minced chicken, stir fry till fragrant. Add in little fish sauce & sugar will do.

** Method **

- Brush Vietnam Rice paper with warmwater till soft

- Arrange all the above ingredients on it, roll it up neatly and serve with dipping sauce.

** Dipping Sauce **

Just mix together : Fish Sauce, Water, Sugar, Lime Juice, Ground toasted peanut (add in Chili Padi if you prefer spicy taste)

at the end of the day, when i had finished all the Vietnam Rice paper, I just pour the dipping sauce onto the ingredient, mix well and serve. It turns out taste better then using the Rice Paper (this is a good meal for those who are watching their weight!!)
